I’ve decided to use the CrushGrind mill mechanism in most of my mills. This is an incredible grinder mechanism. The grinder is made from ceramic, so it can be used for either pepper or salt. While the older steel mechanisms worked well, they could have a hard time with large peppercorns like Penzey’s Extra Bold Tellicherry (which I love!). The CrushGrind mill has no problems with these larger corns. Beyond that, it grinds evenly, and you get a lot more pepper ground per turn. I really didn’t like to make salt mills because the ceramic salt insert for the old design was clunky. Grinding salt with the CrushGrind mechanism is a dream. Using larger chunks, you almost get a salt powder coming out of the mill! In all, this is the best mill mechanism I can get my hands on.
